Hot Chili Paste (Sauce) with Garlic

If you want to add fire to any dish, this red-hot-looking (and tasting) blend of finely chopped hot peppers, garlic, and oil will accomplish the task. The hot chili paste has a consistency something like bottled horseradish, while the hot chili sauce, which contains vinegar, is thinner than the very thick paste. Both are available in small jars in Asian groceries and will keep almost indefinitely if refrigerated. Do not confuse hot chili sauce with commercially available chili sauce (such as Heinz) that comes in bottles in the ketchup section of supermarkets. In a pinch, liquid hot pepper sauce can be used as a substitute to provide the zip of hot chili paste or sauce.
